Three unusual dishes of potatoes


Let’s go!

The beginning of summer I have always associated with strawberries, cherries and a young potato.

About the latter today, and will be discussed.

What could be better than a medium-sized boiled potatoes, cleaned from a more delicate thin skin, seasoned with butter, sprinkled with dill, served with sour cream and still warm from the garden, the first summer tomatoes this was the beginning of my summer vacation at grandma’s every summer in the far childhood . But it’s a classic. And sometimes you want the scrapping of the classical foundations.

So today in my culinary column, I will try to cook exactly three dishes of new potatoes recipes from three different cuisines – Armenian, Spanish and Canarian.

So, we go to the market for groceries and will cook the new potatoes in Spanish with a spicy paste and bell peppers; new potatoes in Armenian with juniper berries and papas arrugadas – wrinkled potatoes with Canarian spicy sauce mojo picon.

Traditionally begin with the purchase of products on the market.

For the preparation of three dishes, we need such products:

– new potatoes – about 2 kg (from calculation 1 a large portion of each dish). The potatoes I bought two varieties – Rosa Crimean Slav. So to speak, for completeness of the experiment. First cook new potatoes in Spanish with a spicy paste and bell peppers.

To do this, the cleaned potato tubers are peeled and put on to cook on the fire. Don’t forget to salt the water.

Cook the potatoes for about 10 minutes, until tender.

While cooking potatoes, prepare the spicy paste. To do this, finely chop 2 cloves of garlic and a pod of bitter pepper.

To garlic and bitter pepper to add a bit of cumin on the tip of a knife and mash in a mortar. Then add to the mix 1-2 teaspoons of paprika and add 1.5 tsp light wine vinegar, then mix well knead

After 10 minutes of cooking the potatoes, drain the water and discard the potatoes in a colander, to stack.

In a pan pour 4 tablespoons of olive oil and heat, then put the potatoes in the pan

While the potatoes are browned, cut into rings sweet pepper pod

And add it, together with the previously prepared spice paste to the pan when the potatoes are slightly browned

Mix well the potatoes with the paste and peppers and fry for 3 minutes

Prepared potatoes to shift on a dish, garnish with herbs and fresh tomatoes.

In addition, the finished dish in Spain is sprinkled with coarse salt

Serve the finished dish with fresh herbs, tomatoes and a dressing of creamy dill sauce (just mix sour cream with chopped dill)

Remains third dish – papas arrugadas, or wrinkled potatoes with Canarian spicy sauce mojo picon.

It should be noted that wrinkly potatoes is a traditional dish of the Canary Islands. This is one of the most unusual and exotic of Spanish cuisine, not only for tourists but even for the Spaniards, who were not born in the Canary Islands. Wrinkled potatoes can be called a “star dish” of the Canary Islands, it is easy and tastes like a baked potato on a fire.

When the potatoes are boiled, drain the water from the pan and put the potatoes back in. Pan put on fire for a few minutes until it evaporates the remaining liquid and potatoes will begin to shrink. The potatoes should be periodically stir.
